Jamaican Saltfish Fritters
Jamaican salt-cod fritters with scallion, tomato, thyme, and Scotch bonnet, crisp outside and savoury enough to eat warm or at room temperature.

Ingredients
- •8 oz salt cod
- •1 1/2 cups all-purpose flour
- •1 tsp baking powder
- •3 green onions, thinly sliced
- •1 medium tomato, seeded and finely diced
- •1 tsp fresh thyme leaves
- •1/4 Scotch bonnet pepper, finely minced
- •1/4 tsp black pepper
- •1 cup cold water
- •2 cups for frying vegetable oil
Directions
- 1Cover salt cod with cold water and soak 8 hours in the refrigerator, changing the water once halfway through.
- 2Drain the cod, simmer it in fresh water for 10 minutes, then drain, cool, and flake finely.
- 3Mix flour, baking powder, green onions, tomato, thyme, Scotch bonnet, black pepper, and flaked cod.
- 4Stir in enough cold water to make a thick batter that drops slowly from a spoon.
- 5Heat oil to 350°F (175°C) and fry heaped tablespoons of batter for 3–4 minutes, turning once.
- 6Drain the fritters on a rack and cool before packing.
