Ingredients

  • 1.5 lbs ground beef, 85% lean
  • 3.5 oz Japanese curry roux, such as S&B Golden Curry, medium hot
  • 2 cups mixed vegetables, chopped
  • 3 shallots, diced
  • 2 cloves garlic, minced
  • 1 small apple, Gala, peeled and grated
  • 2.5 cups beef broth
  • 1 large head cauliflower, riced

Directions

  1. 1Rice the cauliflower by pulsing in a food processor; set aside.
  2. 2Brown ground beef in a large pot over medium-high heat; drain excess fat.
  3. 3Add shallots and garlic; cook 2 minutes until softened.
  4. 4Stir in mixed vegetables and grated apple; cook 3 minutes.
  5. 5Pour in beef broth and bring to a boil, then reduce to a simmer.
  6. 6Break curry roux blocks into the pot; stir until fully dissolved and smooth.
  7. 7Simmer uncovered 10 minutes, stirring occasionally, until curry thickens.
  8. 8Microwave or sauté cauliflower rice 5 minutes; serve curry over top.
