Japanese Curry with Ground Beef

Ingredients
- •1.5 lbs ground beef, 85% lean
- •3.5 oz Japanese curry roux, such as S&B Golden Curry, medium hot
- •2 cups mixed vegetables, chopped
- •3 shallots, diced
- •2 cloves garlic, minced
- •1 small apple, Gala, peeled and grated
- •2.5 cups beef broth
- •1 large head cauliflower, riced
Directions
- 1Rice the cauliflower by pulsing in a food processor; set aside.
- 2Brown ground beef in a large pot over medium-high heat; drain excess fat.
- 3Add shallots and garlic; cook 2 minutes until softened.
- 4Stir in mixed vegetables and grated apple; cook 3 minutes.
- 5Pour in beef broth and bring to a boil, then reduce to a simmer.
- 6Break curry roux blocks into the pot; stir until fully dissolved and smooth.
- 7Simmer uncovered 10 minutes, stirring occasionally, until curry thickens.
- 8Microwave or sauté cauliflower rice 5 minutes; serve curry over top.
