Japanese Ramen

Ingredients

  • 4 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 8 ounces ramen noodles
  • 2 eggs
  • 4 ounces pork belly or rotisserie chicken, sliced
  • 2 green onions, chopped
  • 1/4 cup corn kernels

Directions

  1. 1Bring a pot of water to boil and add eggs; cook for 7 minutes for soft-boiled eggs, then transfer to ice water and peel.
  2. 2In a large pot, bring broth to a boil and add soy sauce, mirin, sesame oil, garlic, and ginger; simmer for 5 minutes.
  3. 3In another pot, cook ramen noodles according to package directions; drain and rinse with cold water.
  4. 4Divide noodles between two bowls and pour hot broth over them.
  5. 5Top each bowl with half the pork, one soft-boiled egg cut in half, green onions, and corn.
  6. 6Serve immediately and enjoy with chopsticks and a spoon.
