Japanese Ramen
A savory bowl of tender noodles in rich broth topped with soft-boiled eggs, green onions, and tender pork.

Ingredients
- •4 cups chicken or vegetable broth
- •2 tablespoons soy sauce
- •1 tablespoon mirin
- •1 teaspoon sesame oil
- •2 cloves garlic, minced
- •1 tablespoon ginger, grated
- •8 ounces ramen noodles
- •2 eggs
- •4 ounces pork belly or rotisserie chicken, sliced
- •2 green onions, chopped
- •1/4 cup corn kernels
Directions
- 1Bring a pot of water to boil and add eggs; cook for 7 minutes for soft-boiled eggs, then transfer to ice water and peel.
- 2In a large pot, bring broth to a boil and add soy sauce, mirin, sesame oil, garlic, and ginger; simmer for 5 minutes.
- 3In another pot, cook ramen noodles according to package directions; drain and rinse with cold water.
- 4Divide noodles between two bowls and pour hot broth over them.
- 5Top each bowl with half the pork, one soft-boiled egg cut in half, green onions, and corn.
- 6Serve immediately and enjoy with chopsticks and a spoon.
