Ingredients

  • 4 cups cooked short-grain white rice
  • 1 lb ground chicken
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tsp granulated sugar
  • 1 tsp fresh ginger, grated
  • 4 eggs
  • 1/4 tsp salt
  • 2 cups green beans, trimmed
  • 1 tbsp sesame seeds

Directions

  1. 1Cook ground chicken with soy sauce, mirin, sugar, and ginger until crumbly and glazed.
  2. 2Beat eggs with salt and scramble them gently into small curds.
  3. 3Blanch the green beans for 2 minutes, then drain and slice.
  4. 4Divide warm rice among four lunch containers.
  5. 5Arrange chicken, scrambled egg, and green beans in separate bands over the rice.
  6. 6Finish with sesame seeds and cool slightly before packing.
