Japanese Tonkotsu Ramen

Ingredients
- •8 cups chicken or vegetable broth
- •2 packages fresh ramen noodles
- •1/2 pound pork belly or shoulder, sliced
- •2 tablespoons soy sauce
- •1 tablespoon mirin
- •2 cloves garlic, minced
- •1 teaspoon sesame oil
- •2 eggs
- •1 cup fresh spinach or bok choy
- •2 green onions, sliced
- •1 tablespoon miso paste
Directions
- 1Sear the pork slices in a hot skillet for 2 minutes per side, then simmer in a mixture of soy sauce, mirin, and garlic for 10 minutes until caramelized.
- 2Bring the broth to a boil and whisk in the miso paste until dissolved, then season with soy sauce and sesame oil.
- 3Boil the eggs for 6-7 minutes for a soft-boiled yolk, then peel and halve them.
- 4Cook the ramen noodles according to package directions, drain, and divide between two bowls.
- 5Pour the hot broth over the noodles and add the pork, eggs, spinach, and green onions to each bowl.
- 6Serve immediately and enjoy with chopsticks and a spoon.
