Ingredients
- •700 g potatoes, cubed
- •2 tsp cumin seeds
- •1/2 tsp turmeric
- •1 tbsp neutral oil
- •2 tbsp cilantro, chopped
Directions
- 1Boil the cubed potatoes twelve minutes until just tender, then drain and let the steam escape.
- 2Heat the oil in a wide pan and add the cumin seeds.
- 3Wait until the seeds darken and pop before anything else goes in.
- 4Add the potatoes and turmeric with plenty of salt.
- 5Fry eight minutes without stirring much, so the undersides crisp and colour.
- 6Stir in the cilantro and serve.
💡 Let the potatoes steam dry after draining. Wet potatoes will not crisp, they will only fall apart in the pan.
