Jeera Aloo (Indian Cumin Potatoes)

Boiled potatoes fried hard in whole cumin and turmeric until the edges crisp and the seeds cling.

Ingredients

  • 700 g potatoes, cubed
  • 2 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1 tbsp neutral oil
  • 2 tbsp cilantro, chopped

Directions

  1. 1Boil the cubed potatoes twelve minutes until just tender, then drain and let the steam escape.
  2. 2Heat the oil in a wide pan and add the cumin seeds.
  3. 3Wait until the seeds darken and pop before anything else goes in.
  4. 4Add the potatoes and turmeric with plenty of salt.
  5. 5Fry eight minutes without stirring much, so the undersides crisp and colour.
  6. 6Stir in the cilantro and serve.

💡 Let the potatoes steam dry after draining. Wet potatoes will not crisp, they will only fall apart in the pan.
