Jelly Donut
Fluffy fried dough pillows filled with sweet jelly and dusted with cinnamon sugar.

Ingredients
- •2 1/4 cups all-purpose flour
- •1 packet (2 1/4 teaspoons) instant yeast
- •1/4 cup granulated sugar
- •1/2 teaspoon salt
- •3/4 cup warm milk
- •2 tablespoons butter, melted
- •1 large egg
- •1/2 cup fruit jelly or jam
- •oil for frying vegetable oil
- •1/4 cup granulated sugar
- •1 teaspoon ground cinnamon
Directions
- 1Mix flour, yeast, sugar, and salt in a bowl. Add warm milk, melted butter, and egg, then knead until smooth. Let dough rise 1 hour until doubled.
- 2Roll dough to 1/4-inch thickness on a floured surface. Cut into 3-inch circles and let rise 30 minutes.
- 3Heat oil to 375°F in a deep pot or fryer. Fry dough circles until golden brown on each side, about 1-2 minutes per side.
- 4Remove donuts and drain on paper towels. Once slightly cooled, use a small knife to poke a hole in the side of each donut.
- 5Fill a piping bag with jelly and inject about 1 tablespoon into each donut through the hole.
- 6Mix cinnamon and sugar in a shallow bowl. Roll warm donuts in the cinnamon-sugar mixture until fully coated.
