Jelly Donut

Fluffy fried dough pillows filled with sweet jelly and dusted with cinnamon sugar.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup warm milk
  • 2 tablespoons butter, melted
  • 1 large egg
  • 1/2 cup fruit jelly or jam
  • oil for frying vegetable oil
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Directions

  1. 1Mix flour, yeast, sugar, and salt in a bowl. Add warm milk, melted butter, and egg, then knead until smooth. Let dough rise 1 hour until doubled.
  2. 2Roll dough to 1/4-inch thickness on a floured surface. Cut into 3-inch circles and let rise 30 minutes.
  3. 3Heat oil to 375°F in a deep pot or fryer. Fry dough circles until golden brown on each side, about 1-2 minutes per side.
  4. 4Remove donuts and drain on paper towels. Once slightly cooled, use a small knife to poke a hole in the side of each donut.
  5. 5Fill a piping bag with jelly and inject about 1 tablespoon into each donut through the hole.
  6. 6Mix cinnamon and sugar in a shallow bowl. Roll warm donuts in the cinnamon-sugar mixture until fully coated.
