Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup mung bean flour
  • 1 3/4 cups water
  • 4 eggs
  • 4 green onions, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup hoisin sauce
  • 2 tbsp chili crisp
  • 2 tbsp sesame seeds
  • 8 wonton wrappers
  • 2 tbsp vegetable oil

Directions

  1. 1Whisk all-purpose flour, mung bean flour, and water until smooth, then rest the batter for 10 minutes.
  2. 2Brush a non-stick skillet lightly with oil and spread a thin layer of batter into an 8-inch circle.
  3. 3Crack one egg over the crepe, spread it thinly, and scatter with green onion, cilantro, and sesame seeds.
  4. 4Flip the crepe when the egg sets, then spread the cooked side with hoisin sauce and a little chili crisp.
  5. 5Place two crisp wonton wrappers across the centre and fold the crepe around them into a compact rectangle.
  6. 6Repeat with the remaining batter and serve immediately while the wonton layer is still crunchy.
