  • •8 cups chicken broth
  • •2 slices fresh ginger
  • •1/2 pound chicken breast
  • •2 cloves garlic, minced
  • •1 teaspoon salt
  • •1/2 teaspoon white pepper
  • •2 stalks green onions, chopped
  • •2 tablespoons crispy fried shallots
  • •1 tablespoon soy sauce

Directions

  1. 1Rinse rice under cold water until water runs clear, then drain well.
  2. 2Bring chicken broth to a boil in a large pot with ginger slices and minced garlic.
  3. 3Add rice and diced chicken breast, then reduce heat to low and simmer uncovered for 30-35 minutes, stirring occasionally.
  4. 4Season with salt, white pepper, and soy sauce to taste.
  5. 5Divide into bowls and top with chopped green onions and crispy fried shallots before serving.

💡 Jook should simmer gently enough for rice to break down without scorching; stir more often only as the porridge becomes thick.
