Kısır (Turkish Bulgur Wheat Salad)
A tangy, herb-packed bulgur salad tossed with pomegranate molasses, tomato paste, and fresh vegetables — Turkey's answer to tabbouleh, served at nearly every family table.

Ingredients
- •1 cup fine bulgur wheat
- •1 cup boiling water
- •2 tbsp tomato paste
- •2 tbsp pomegranate molasses
- •3 tbsp olive oil
- •2 tbsp lemon juice
- •1 tsp sweet paprika
- •1/2 tsp red chili flakes
- •1/2 tsp ground cumin
- •1 tsp salt
- •2 Roma tomatoes, finely diced
- •1/2 English cucumber, finely diced
- •4 green onions, thinly sliced
- •1/2 cup fresh parsley, finely chopped
- •3 tbsp fresh mint, finely chopped
Directions
- 1Place bulgur in a large bowl; pour boiling water over it, cover with a plate, and let steam 10 minutes until water is fully absorbed.
- 2Fluff bulgur with a fork, then stir in tomato paste, pomegranate molasses, olive oil, lemon juice, paprika, chili flakes, cumin, and salt until every grain is coated and pink-red.
- 3Let the dressed bulgur cool to room temperature, about 5 minutes.
- 4Fold in tomatoes, cucumber, green onions, parsley, and mint.
- 5Taste and adjust salt, lemon juice, or chili flakes to your liking.
- 6Serve at room temperature or slightly chilled; it improves after 30 minutes as flavours meld.
💡 Pomegranate molasses is increasingly available in the international aisle at major Canadian grocery stores (Loblaws, Superstore); substitute 1 tbsp lemon juice plus 1 tsp honey if needed. Use fine (#1) bulgur — it absorbs without cooking.
