Kachumbari (Kenyan Tomato Onion Salad)
Tomato and red onion with lime and chili, rinsed sharp rather than sweet, alongside almost every Kenyan meal.

Ingredients
- •4 tomatoes, diced
- •1 red onion, thinly sliced
- •2 tbsp lime juice
- •2 tbsp cilantro, chopped
- •1 green chilies, sliced
Directions
- 1Slice the red onion as thinly as you can manage.
- 2Rinse the slices under cold running water, then squeeze them dry in your hands.
- 3Dice the tomatoes, discarding the wateriest seeds so the salad does not flood.
- 4Combine the onion, tomato, cilantro and sliced green chili.
- 5Add the lime juice and a good pinch of salt and toss.
- 6Rest ten minutes before serving, and eat it the same day.
💡 Rinsing the onion is what separates kachumbari from a raw onion salad. It takes out the harshness and leaves the crunch.
