Kachumbari (Kenyan Tomato Onion Salad)

Tomato and red onion with lime and chili, rinsed sharp rather than sweet, alongside almost every Kenyan meal.

Ingredients

  • 4 tomatoes, diced
  • 1 red onion, thinly sliced
  • 2 tbsp lime juice
  • 2 tbsp cilantro, chopped
  • 1 green chilies, sliced

Directions

  1. 1Slice the red onion as thinly as you can manage.
  2. 2Rinse the slices under cold running water, then squeeze them dry in your hands.
  3. 3Dice the tomatoes, discarding the wateriest seeds so the salad does not flood.
  4. 4Combine the onion, tomato, cilantro and sliced green chili.
  5. 5Add the lime juice and a good pinch of salt and toss.
  6. 6Rest ten minutes before serving, and eat it the same day.

💡 Rinsing the onion is what separates kachumbari from a raw onion salad. It takes out the harshness and leaves the crunch.
