Kaddu ki Sabzi (North Indian Spiced Pumpkin)

North Indian pumpkin cooked with cumin, ginger, chile, and warm spices until tender and lightly caramelized.

Ingredients

  • 2 lb pumpkin, peeled and cubed
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tbsp fresh ginger, grated
  • 1/2 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/4 tsp red chili powder
  • 1 tsp salt
  • 1 tsp brown sugar

Directions

  1. 1Heat vegetable oil and add cumin seeds.
  2. 2Add ginger, turmeric, coriander, and chili powder and stir for 20 seconds.
  3. 3Add pumpkin, salt, and brown sugar.
  4. 4Toss to coat and cover the skillet.
  5. 5Cook for 12 minutes, stirring twice, until tender.
  6. 6Uncover and cook 3 minutes more to lightly caramelize the edges.
