Kaddu ki Sabzi (North Indian Spiced Pumpkin)
North Indian pumpkin cooked with cumin, ginger, chile, and warm spices until tender and lightly caramelized.

Ingredients
- •2 lb pumpkin, peeled and cubed
- •2 tbsp vegetable oil
- •1 tsp cumin seeds
- •1 tbsp fresh ginger, grated
- •1/2 tsp ground turmeric
- •1 tsp ground coriander
- •1/4 tsp red chili powder
- •1 tsp salt
- •1 tsp brown sugar
Directions
- 1Heat vegetable oil and add cumin seeds.
- 2Add ginger, turmeric, coriander, and chili powder and stir for 20 seconds.
- 3Add pumpkin, salt, and brown sugar.
- 4Toss to coat and cover the skillet.
- 5Cook for 12 minutes, stirring twice, until tender.
- 6Uncover and cook 3 minutes more to lightly caramelize the edges.
