Kadhi Pakora

Ingredients

  • 1 cup plain yogurt
  • 2 tablespoons chickpea flour (besan)
  • 3 cups water
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2 teaspoons cumin seeds
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3/4 cup chickpea flour for pakora
  • 1 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped

Directions

  1. 1Whisk yogurt with 2 tablespoons chickpea flour, turmeric, and chili powder until smooth, then mix in water and set aside.
  2. 2Prepare pakora batter by mixing 3/4 cup chickpea flour with salt and 1/4 cup water to form a thick consistency.
  3. 3Heat oil in a large pot, add cumin seeds and let them crackle, then add onion, garlic, and ginger; sauté until golden.
  4. 4Carefully drop spoonfuls of pakora batter into hot oil and fry until golden brown, then remove and drain on paper towels.
  5. 5Pour the yogurt mixture into the pot, stirring constantly to avoid lumps, and bring to a gentle simmer.
  6. 6Add the fried pakoras to the curry and simmer for 10-12 minutes until the sauce thickens slightly.
  7. 7Taste and adjust seasoning with salt if needed, then garnish with fresh cilantro and serve hot over rice.
