Ingredients

  • •4 eggs, separated
  • •1 cup all-purpose flour
  • •1 cup whole milk
  • •2 tablespoons sugar
  • •1 teaspoon vanilla extract
  • •1/4 teaspoon salt
  • •3 tablespoons butter
  • •2 tablespoons powdered sugar
  • •1 cup plum compote or jam

Directions

  1. 1Whisk egg yolks with sugar and vanilla until pale, then mix in milk and flour until smooth.
  2. 2In a separate bowl, beat egg whites with salt until stiff peaks form, then gently fold into the batter.
  3. 3Heat butter in a large non-stick skillet over medium heat until foaming.
  4. 4Pour batter into the skillet and cook for 5-7 minutes until the bottom is golden and the top is set.
  5. 5Using two spatulas, tear the pancake into bite-sized pieces and toss them in the pan for 2-3 minutes until lightly crisped.
  6. 6Transfer to a serving plate, dust generously with powdered sugar, and serve immediately with warm plum compote.

💡 Kaiserschmarrn should be torn only after the pancake base has set; breaking it too early turns airy pieces into small scrambled clumps.
