Ingredients

  • 6 green cooking banana, peeled and cut into chunks
  • 2 cans (15 oz each) canned kidney beans, drained and rinsed
  • 3 tomatoes, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 tsp ground cumin
  • 3 cups vegetable broth
  • 1 tsp salt
  • 1/4 tsp black pepper

Directions

  1. 1Heat vegetable oil and cook onion for 5 minutes until softened.
  2. 2Add garlic and cumin and cook for 30 seconds.
  3. 3Add tomatoes and cook for 5 minutes until they begin to break down.
  4. 4Add green cooking banana, vegetable broth, salt, and black pepper.
  5. 5Cover and simmer for 15 minutes, then add kidney beans and cook 8 minutes more.
  6. 6Serve when the bananas are tender and the stew has thickened slightly.

💡 Use firm green cooking banana, not sweet bananas; the starch should hold its shape as it simmers.
