Katogo (Ugandan Matoke Breakfast Stew)

Ingredients
- •6 green cooking banana, peeled and cut into chunks
- •2 cans (15 oz each) canned kidney beans, drained and rinsed
- •3 tomatoes, diced
- •1 medium yellow onion, diced
- •3 cloves garlic, minced
- •2 tbsp vegetable oil
- •1 tsp ground cumin
- •3 cups vegetable broth
- •1 tsp salt
- •1/4 tsp black pepper
Directions
- 1Heat vegetable oil and cook onion for 5 minutes until softened.
- 2Add garlic and cumin and cook for 30 seconds.
- 3Add tomatoes and cook for 5 minutes until they begin to break down.
- 4Add green cooking banana, vegetable broth, salt, and black pepper.
- 5Cover and simmer for 15 minutes, then add kidney beans and cook 8 minutes more.
- 6Serve when the bananas are tender and the stew has thickened slightly.
💡 Use firm green cooking banana, not sweet bananas; the starch should hold its shape as it simmers.
