Kaya Toast with Soft-Boiled Eggs

Ingredients
- •1 cup coconut milk
- •6 eggs
- •3/4 cup granulated sugar
- •1 tsp pandan extract
- •8 slices white sandwich bread
- •4 tbsp unsalted butter, chilled
- •2 tsp dark soy sauce
- •1/4 tsp white pepper
Directions
- 1Whisk coconut milk, two eggs, sugar, and pandan extract in a heatproof bowl until smooth.
- 2Set the bowl over gently simmering water and cook 15–18 minutes, stirring constantly, until the kaya becomes thick and glossy.
- 3Toast the bread until crisp and golden, then spread four slices generously with warm kaya.
- 4Lay thin slabs of cold butter over the kaya and close with the remaining toast.
- 5Lower the remaining four eggs into barely simmering water for 6 minutes, then crack them into small bowls.
- 6Season the soft eggs with dark soy and white pepper and serve beside the toast for dipping.
