A classic Anglo-Indian breakfast dish of spiced rice, flaked fish, and eggs with a golden turmeric hue.

Ingredients

  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric
  • 2 cups cooked rice
  • 350 grams smoked haddock or cod, flaked
  • 3 hard-boiled eggs, chopped
  • 1/2 cup frozen peas
  • 1/4 cup fresh parsley, chopped
  • to taste Salt and pepper
  • 1 tablespoon lemon juice

Directions

  1. 1Melt butter in a large skillet over medium heat and sauté the onion until softened, about 3 minutes.
  2. 2Stir in curry powder and turmeric, cooking for 1 minute until fragrant.
  3. 3Add the cooked rice and stir well to coat with the spiced butter, breaking up any clumps.
  4. 4Gently fold in the flaked fish and frozen peas, cooking for 3-4 minutes until heated through.
  5. 5Remove from heat and carefully stir in the chopped hard-boiled eggs and fresh parsley.
  6. 6Season with salt, pepper, and lemon juice to taste, and serve immediately.
