Kedgeree
A classic Anglo-Indian breakfast dish of spiced rice, flaked fish, and eggs with a golden turmeric hue.

Ingredients
- •2 tablespoons butter
- •1 medium onion, finely chopped
- •2 teaspoons curry powder
- •1 teaspoon turmeric
- •2 cups cooked rice
- •350 grams smoked haddock or cod, flaked
- •3 hard-boiled eggs, chopped
- •1/2 cup frozen peas
- •1/4 cup fresh parsley, chopped
- •to taste Salt and pepper
- •1 tablespoon lemon juice
Directions
- 1Melt butter in a large skillet over medium heat and sauté the onion until softened, about 3 minutes.
- 2Stir in curry powder and turmeric, cooking for 1 minute until fragrant.
- 3Add the cooked rice and stir well to coat with the spiced butter, breaking up any clumps.
- 4Gently fold in the flaked fish and frozen peas, cooking for 3-4 minutes until heated through.
- 5Remove from heat and carefully stir in the chopped hard-boiled eggs and fresh parsley.
- 6Season with salt, pepper, and lemon juice to taste, and serve immediately.
