Kefta Briouats (Moroccan Meat Pastries)

Spiced beef folded into phyllo triangles and baked until the layers shatter, a Ramadan table standard.

Ingredients

  • 12 phyllo pastry sheets
  • 350 g ground beef
  • 1 small onion, finely chopped
  • 2 tbsp cilantro, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 egg
  • 60 g butter, melted

Directions

  1. 1Cook the beef and onion with the cumin and paprika for eight minutes, breaking up the meat as it browns.
  2. 2Take off the heat, stir in the cilantro and the beaten egg, and cool ten minutes.
  3. 3Heat the oven to 200C.
  4. 4Cut each phyllo sheet into long strips and brush with melted butter, keeping the rest covered.
  5. 5Place a spoon of filling at one end and fold along the strip into a triangle.
  6. 6Brush the tops with butter and bake twenty minutes until deep golden and crisp.

💡 The egg is what binds the filling once it cools. Fill warm and the triangles leak and stick to the tray.
