Kenkey
A savory West African cornmeal dumpling wrapped in corn husks and served with spicy tomato sauce and fried fish.

Ingredients
- •2 cups cornmeal
- •1 cup corn flour
- •4 cups water
- •1 teaspoon salt
- •8 dried corn husks
- •3 large tomatoes
- •1 onion
- •2 cloves garlic
- •2 tablespoons vegetable oil
- •1 teaspoon chili powder
- •1 teaspoon ginger powder
- •4 fresh fish or mackerel fillets
Directions
- 1Soak corn husks in warm water for 15 minutes until soft.
- 2Mix cornmeal and corn flour with 3 cups water and salt to form a smooth dough, then boil the remaining 1 cup water and stir it in while cooking for 5 minutes until thick.
- 3Divide dough into portions and wrap each in two overlapping corn husks, folding edges securely.
- 4Boil wrapped kenkey parcels in salted water for 30 minutes until cooked through.
- 5Blend tomatoes, onion, and garlic together, then fry in oil for 3 minutes.
- 6Add chili powder, ginger powder, and salt to the tomato mixture and simmer for 10 minutes.
- 7Season and fry fish fillets in oil until golden on both sides, about 4-5 minutes per side.
- 8Remove kenkey from husks and serve hot with the tomato sauce and fried fish on the side.
