Ingredients

  • 300 g glutinous rice
  • 250 ml coconut milk
  • 50 g sugar
  • 1/2 tsp salt
  • 2 bananas, sliced
  • 6 banana leaves, cut into rectangles

Directions

  1. 1Soak the glutinous rice in cold water for four hours, then drain well.
  2. 2Steam the rice over boiling water for twenty minutes until translucent and tender.
  3. 3Warm the coconut milk with the sugar and salt, then stir it through the hot rice. Rest ten minutes.
  4. 4Soften the banana leaves briefly over a flame so they fold without splitting.
  5. 5Spread rice on each leaf, lay banana slices down the centre, then fold into tight parcels and secure.
  6. 6Grill over medium coals about twelve minutes, turning, until the leaves char and scent the rice.

💡 The four-hour soak is not optional. Unsoaked glutinous rice steams to a chalky centre no amount of extra time fixes.
