Khao Niao Ping (Thai Grilled Sticky Rice Parcels)
Coconut sticky rice wrapped around banana in banana leaf, grilled until the parcel chars and the rice inside turns creamy.

Ingredients
- •300 g glutinous rice
- •250 ml coconut milk
- •50 g sugar
- •1/2 tsp salt
- •2 bananas, sliced
- •6 banana leaves, cut into rectangles
Directions
- 1Soak the glutinous rice in cold water for four hours, then drain well.
- 2Steam the rice over boiling water for twenty minutes until translucent and tender.
- 3Warm the coconut milk with the sugar and salt, then stir it through the hot rice. Rest ten minutes.
- 4Soften the banana leaves briefly over a flame so they fold without splitting.
- 5Spread rice on each leaf, lay banana slices down the centre, then fold into tight parcels and secure.
- 6Grill over medium coals about twelve minutes, turning, until the leaves char and scent the rice.
