Khao Pad Crab
A fragrant Thai fried rice dish loaded with succulent crab meat, jasmine rice, and aromatic seasonings that creates a restaurant-quality meal in minutes.

Ingredients
- •3 cups cooked jasmine rice, cooled
- •8 oz fresh or canned crab meat, drained
- •3 eggs, beaten
- •3 cloves garlic, minced
- •3 tablespoons fish sauce
- •2 tablespoons vegetable oil
- •1 cup diced onion
- •1 cup diced bell pepper
- •1/2 cup frozen peas and carrots
- •3 green onions, chopped
- •1 teaspoon white pepper
- •2 tablespoons oyster sauce
Directions
- 1Heat oil in a large wok or skillet over high heat. Add minced garlic and cook for 30 seconds until fragrant.
- 2Pour in beaten eggs and scramble quickly, then push to the side of the wok.
- 3Add onions, bell pepper, and peas with carrots. Stir-fry for 2-3 minutes until vegetables soften slightly.
- 4Add the cooled jasmine rice, breaking up any clumps, and stir-fry for 3-4 minutes.
- 5Gently fold in crab meat, being careful not to break it apart too much.
- 6Pour in fish sauce and oyster sauce, then sprinkle with white pepper. Toss everything together for 1-2 minutes.
- 7Remove from heat, garnish with green onions, and serve immediately.
