Khao Soi

A fragrant Northern Thai curry noodle soup with tender chicken, crispy fried noodles, and a rich coconut-based broth.

Ingredients

  • 3 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 1 pound chicken breast, cut into chunks
  • 3 cups chicken broth
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 8 oz egg noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 shallot, thinly sliced
  • 2 limes lime wedges for serving
  • to taste fresh cilantro and crispy fried onions

Directions

  1. 1Cook egg noodles according to package directions, drain and set aside. Reserve 1 cup cooked noodles and fry separately in oil until crispy.
  2. 2Heat 2 tablespoons oil in a large pot over medium heat. Sauté garlic and shallot for 1 minute until fragrant.
  3. 3Add curry paste and cook for 2 minutes, stirring constantly to release flavors.
  4. 4Pour in coconut milk and stir well, cooking for 2 minutes until it thickens slightly.
  5. 5Add chicken broth and bring to a simmer. Add chicken chunks and simmer for 15-20 minutes until cooked through.
  6. 6Season with fish sauce and brown sugar, stirring to combine. Taste and adjust seasoning as needed.
  7. 7Divide cooked noodles among bowls and ladle hot curry broth and chicken over top. Garnish with crispy fried noodles, cilantro, crispy fried onions, and serve with lime wedges.
