Khao Tang Na Tang (Thai Rice Crackers with Coconut Pork Dip)
Crisp rice crackers with a thick coconut and pork dip, sweet and salty with red curry underneath.

Ingredients
- •24 rice crackers
- •250 g ground pork
- •250 ml coconut milk
- •2 tbsp red curry paste
- •2 tbsp fish sauce
- •1 tbsp palm sugar
- •2 tbsp peanuts, finely chopped
- •2 tbsp cilantro, chopped
Directions
- 1Pour half the coconut milk into a pan and simmer ten minutes until it thickens and the oil begins to separate.
- 2Stir in the red curry paste and fry one minute until it smells sweet rather than raw.
- 3Add the ground pork, breaking it up, and cook five minutes until no pink remains.
- 4Add the rest of the coconut milk, the fish sauce and the palm sugar.
- 5Simmer eight minutes until the dip is thick enough to sit on a cracker.
- 6Stir in the peanuts, scatter the cilantro, and serve warm with the rice crackers.
💡 Splitting the coconut milk matters. Frying the curry paste in the thick first half is where the flavour comes from.
