Khao Tang Na Tang (Thai Rice Crackers with Coconut Pork Dip)

Crisp rice crackers with a thick coconut and pork dip, sweet and salty with red curry underneath.

Ingredients

  • 24 rice crackers
  • 250 g ground pork
  • 250 ml coconut milk
  • 2 tbsp red curry paste
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • 2 tbsp peanuts, finely chopped
  • 2 tbsp cilantro, chopped

Directions

  1. 1Pour half the coconut milk into a pan and simmer ten minutes until it thickens and the oil begins to separate.
  2. 2Stir in the red curry paste and fry one minute until it smells sweet rather than raw.
  3. 3Add the ground pork, breaking it up, and cook five minutes until no pink remains.
  4. 4Add the rest of the coconut milk, the fish sauce and the palm sugar.
  5. 5Simmer eight minutes until the dip is thick enough to sit on a cracker.
  6. 6Stir in the peanuts, scatter the cilantro, and serve warm with the rice crackers.

💡 Splitting the coconut milk matters. Frying the curry paste in the thick first half is where the flavour comes from.
