Ingredients

  • 2 large cucumber, diced
  • 2 cups plain yogurt
  • 1 clove garlic, finely minced
  • 1 tsp dried mint
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 3/4 tsp salt

Directions

  1. 1Place the diced cucumber in a bowl and sprinkle with half the salt.
  2. 2Let the cucumber stand for 5 minutes, then drain off released water.
  3. 3Whisk yogurt, garlic, dried mint, lemon juice, olive oil, and remaining salt.
  4. 4Fold the drained cucumber into the yogurt mixture.
  5. 5Chill for 5 minutes so the flavours settle.
  6. 6Serve cold beside grilled meats, rice, or flatbreads.
