Ingredients
- •2 large cucumber, diced
- •2 cups plain yogurt
- •1 clove garlic, finely minced
- •1 tsp dried mint
- •1 tbsp fresh lemon juice
- •1 tbsp olive oil
- •3/4 tsp salt
Directions
- 1Place the diced cucumber in a bowl and sprinkle with half the salt.
- 2Let the cucumber stand for 5 minutes, then drain off released water.
- 3Whisk yogurt, garlic, dried mint, lemon juice, olive oil, and remaining salt.
- 4Fold the drained cucumber into the yogurt mixture.
- 5Chill for 5 minutes so the flavours settle.
- 6Serve cold beside grilled meats, rice, or flatbreads.
💡 Briefly salting and draining the cucumber keeps the yogurt dressing thick instead of watery after chilling.
