Kimchi Jjigae

A bubbling, spicy Korean stew loaded with tangy kimchi, tender pork, and tofu that warms you from the inside out.

Ingredients

  • 2 cups kimchi, chopped
  • 1/2 pound pork belly or shoulder, sliced
  • 1 block firm tofu, cubed
  • 1 tablespoon kimchi juice
  • 2 tablespoons gochugaru (Korean red chili flakes)
  • 4 cups vegetable or anchovy broth
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions, chopped

Directions

  1. 1Heat sesame oil in a large pot over medium-high heat and cook pork until lightly browned, about 3-4 minutes.
  2. 2Add minced garlic and cook for 30 seconds until fragrant, then add chopped kimchi and gochugaru, stirring well for 1-2 minutes.
  3. 3Pour in the broth, kimchi juice, and soy sauce, then bring to a boil.
  4. 4Reduce heat to medium, add tofu cubes, and simmer for 15-20 minutes until flavors meld.
  5. 5Taste and adjust seasoning if needed, then garnish with green onions and serve hot in individual bowls.
