Kimchi Jjigae
A bubbling, spicy Korean stew loaded with tangy kimchi, tender pork, and tofu that warms you from the inside out.

Ingredients
- •2 cups kimchi, chopped
- •1/2 pound pork belly or shoulder, sliced
- •1 block firm tofu, cubed
- •1 tablespoon kimchi juice
- •2 tablespoons gochugaru (Korean red chili flakes)
- •4 cups vegetable or anchovy broth
- •2 cloves garlic, minced
- •1 tablespoon soy sauce
- •1 teaspoon sesame oil
- •2 green onions, chopped
Directions
- 1Heat sesame oil in a large pot over medium-high heat and cook pork until lightly browned, about 3-4 minutes.
- 2Add minced garlic and cook for 30 seconds until fragrant, then add chopped kimchi and gochugaru, stirring well for 1-2 minutes.
- 3Pour in the broth, kimchi juice, and soy sauce, then bring to a boil.
- 4Reduce heat to medium, add tofu cubes, and simmer for 15-20 minutes until flavors meld.
- 5Taste and adjust seasoning if needed, then garnish with green onions and serve hot in individual bowls.
