Japanese burdock root and carrot quickly braised with soy, mirin, and sesame for a savory-sweet bento side with plenty of crunch.

Ingredients

  • 8 oz burdock root, scrubbed and cut into fine matchsticks
  • 1 medium carrots, cut into fine matchsticks
  • 1 tbsp sesame oil
  • 1 1/2 tbsp soy sauce
  • 1 1/2 tbsp mirin
  • 1 tsp granulated sugar
  • 2 tsp sesame seeds, toasted
  • 1/4 tsp red pepper flakes

Directions

  1. 1Place the cut burdock in a bowl of cold water for 5 minutes, then drain and pat dry.
  2. 2Heat sesame oil in a skillet over medium-high and stir-fry burdock and carrot for 4 minutes.
  3. 3Add soy sauce, mirin, sugar, and red pepper flakes and cook 4–5 minutes, stirring, until the vegetables are tender-crisp and glossy.
  4. 4Remove from heat, toss with sesame seeds, and cool to room temperature before serving.

💡 Do not soak burdock for long; a brief rinse removes excess surface bitterness while preserving the earthy flavor that defines the dish.
