Kippers

Ingredients
- •2 kipper fillets (about 200g)
- •2 tablespoons butter
- •1/2 lemon lemon, cut into wedges
- •to taste salt
- •to taste black pepper
- •1 tablespoon fresh parsley, chopped
Directions
- 1Heat a large skillet over medium heat and add 1 tablespoon of butter.
- 2Place kipper fillets skin-side down in the hot pan and cook for 3-4 minutes until the skin crisps.
- 3Flip the fillets carefully and cook for another 2-3 minutes on the flesh side.
- 4Remove kippers to a serving plate and top with remaining butter, lemon wedge, salt, pepper, and parsley.
- 5Serve immediately while warm with toast or black bread.
