Kofta Meatball Stew
Aromatic spiced meatballs simmered in a rich tomato and chickpea stew with warm Middle Eastern spices.

Ingredients
- •1 lb ground beef
- •1/2 cup breadcrumbs
- •1 egg
- •2 tsp ground cumin
- •1 tsp ground cinnamon
- •1 tsp paprika
- •2 tbsp olive oil
- •1 onion, diced
- •3 cloves garlic, minced
- •1 can (28 oz) crushed tomatoes
- •1 can (15 oz) chickpeas, drained
- •1 cup beef broth
- •to taste salt and pepper
Directions
- 1Mix ground beef, breadcrumbs, egg, 1 tsp cumin, cinnamon, and paprika; form into 16-20 meatballs.
- 2Heat olive oil in a large pot over medium-high heat and brown meatballs on all sides, then remove and set aside.
- 3In the same pot, sauté diced onion until softened, about 3 minutes, then add garlic and cook 1 minute more.
- 4Stir in remaining cumin and paprika, cook for 30 seconds until fragrant.
- 5Pour in crushed tomatoes and beef broth, scraping up browned bits from the bottom.
- 6Return meatballs to pot, add chickpeas, and bring to a simmer.
- 7Cover and simmer for 25-30 minutes until meatballs are cooked through and stew is thickened, stirring occasionally.
- 8Season with salt and pepper to taste and serve hot.
