Kofta Meatball Stew

Aromatic spiced meatballs simmered in a rich tomato and chickpea stew with warm Middle Eastern spices.

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) chickpeas, drained
  • 1 cup beef broth
  • to taste salt and pepper

Directions

  1. 1Mix ground beef, breadcrumbs, egg, 1 tsp cumin, cinnamon, and paprika; form into 16-20 meatballs.
  2. 2Heat olive oil in a large pot over medium-high heat and brown meatballs on all sides, then remove and set aside.
  3. 3In the same pot, sauté diced onion until softened, about 3 minutes, then add garlic and cook 1 minute more.
  4. 4Stir in remaining cumin and paprika, cook for 30 seconds until fragrant.
  5. 5Pour in crushed tomatoes and beef broth, scraping up browned bits from the bottom.
  6. 6Return meatballs to pot, add chickpeas, and bring to a simmer.
  7. 7Cover and simmer for 25-30 minutes until meatballs are cooked through and stew is thickened, stirring occasionally.
  8. 8Season with salt and pepper to taste and serve hot.
