Korean Beef Lettuce Wraps

Sweet and savoury ground beef with sesame, garlic, and ginger spooned into crisp butter lettuce cups and topped with pickled cucumbers and sriracha mayo. Fast, fun, and packed with bold Korean-inspired flavour.

Ingredients

  • 600 g lean ground beef
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar, packed
  • 1 tbsp sesame oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tbsp rice vinegar
  • 1 tbsp vegetable oil
  • 1 large head butter lettuce, leaves separated
  • 1/2 English cucumber, thinly sliced
  • 2 tbsp rice vinegar (for pickles)
  • 1 tsp sugar (for pickles)
  • 1 cup cooked jasmine rice
  • 3 green onions, sliced
  • 1 tbsp sesame seeds
  • 2 tbsp mayonnaise
  • 1 tsp sriracha

Directions

  1. 1Stir together cucumber slices, 2 tbsp rice vinegar, and sugar in a small bowl; set aside to quick-pickle for 15 minutes.
  2. 2Whisk soy sauce, brown sugar, sesame oil, gochujang, and 1 tbsp rice vinegar in a bowl; set aside.
  3. 3Stir together mayonnaise and sriracha for the drizzle sauce; set aside.
  4. 4Heat vegetable oil in a large skillet over high heat; add ground beef and cook, breaking it up, until well browned, about 6 minutes.
  5. 5Add garlic and ginger; cook 1 minute until fragrant.
  6. 6Pour sauce over beef and toss to coat; cook 1 minute more until slightly glossy; remove from heat.
  7. 7Arrange lettuce cups on a platter; spoon a little rice into each cup.
  8. 8Top rice with a generous spoonful of beef mixture, pickled cucumbers, green onions, and sesame seeds.
  9. 9Drizzle with sriracha mayo and serve immediately — let everyone build their own.

💡 Gochujang is a fermented Korean chili paste found in the Asian foods aisle at most major Canadian grocery stores (Loblaws, T&T, H Mart). If unavailable, substitute 1 tsp sriracha mixed with 1/2 tsp miso paste. Ground pork or turkey also work great here.
