Ingredients

  • 4 cups cooked short-grain white rice
  • 8 oz Korean sausage, sliced
  • 4 eggs
  • 2 cups kimchi, chopped
  • 4 cups spinach
  • 1 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tbsp vegetable oil
  • 1 tbsp sesame seeds

Directions

  1. 1Pan-fry the sausage in vegetable oil for 4 minutes until browned.
  2. 2Fry the eggs until the whites set and the yolks remain slightly soft.
  3. 3Blanch the spinach for 30 seconds, squeeze dry, and season with soy sauce and sesame oil.
  4. 4Warm the kimchi briefly in the same skillet for 2 minutes.
  5. 5Divide rice among lunch containers and arrange sausage, egg, spinach, and kimchi on top.
  6. 6Finish with sesame seeds and cool slightly before sealing.
