Korokke (Japanese Potato Croquettes)
Japanese potato croquettes with seasoned ground beef and onion, coated in panko and deep-fried until crisp.

Ingredients
- •2 lb russet potatoes, peeled and cubed
- •8 oz ground beef
- •1 medium yellow onion, finely diced
- •1 tbsp soy sauce
- •1 tsp salt
- •1/2 tsp black pepper
- •1 cup all-purpose flour
- •2 eggs, beaten
- •2 cups panko breadcrumbs
- •4 cups vegetable oil for frying
Directions
- 1Boil the potatoes for 15 minutes until tender, drain well, and mash while hot.
- 2Cook ground beef and onion for 7 minutes, then season with soy sauce and black pepper.
- 3Mix the beef mixture into the potatoes and cool for 10 minutes.
- 4Shape into ovals, then coat each with flour, beaten egg, and panko breadcrumbs.
- 5Heat vegetable oil to 350°F (175°C) and fry the korokke in batches for 3–4 minutes.
- 6Drain on paper towel and serve hot.
💡 Cool the potato-beef mixture before breading; warm korokke soften quickly and can split open in the fryer.
