Koulouri Thessalonikis (Greek Sesame Bread Rings)

Chewy bread rings rolled thickly in sesame, sold from street carts across Thessaloniki before breakfast.

Ingredients

  • 500 g bread flour
  • 2 tsp active dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 320 ml water
  • 120 g sesame seeds

Directions

  1. 1Mix the flour, yeast, sugar, salt and water, then knead ten minutes until smooth and elastic.
  2. 2Cover and rise ninety minutes until doubled.
  3. 3Divide into eight pieces and roll each into a long rope, then join the ends into a ring.
  4. 4Dip each ring in water, then press it into the sesame seeds until thickly coated all over.
  5. 5Rest the rings on a lined tray for twenty minutes.
  6. 6Bake at 200C for eighteen minutes until deep golden and hollow-sounding underneath.

💡 Dip in water, not egg. Water is what lets that much sesame stick without the crust turning soft.
