Kuku Sibzamini (Persian Potato Patties)
Mashed potato and egg turned gold with turmeric and fried into soft patties, eaten hot or packed cold.

Ingredients
- •700 g potatoes, cooked and mashed
- •3 eggs
- •1/2 tsp turmeric
- •1 tsp salt
- •3 tbsp neutral oil
Directions
- 1Mash the cooked potatoes until completely smooth, with no lumps left at all.
- 2Beat in the eggs, turmeric and salt until the mixture is even and deep yellow.
- 3Rest ten minutes; the mixture firms up and becomes far easier to shape.
- 4Wet your hands and form flat patties about a centimetre and a half thick.
- 5Heat the oil in a wide pan over medium heat.
- 6Fry four minutes a side until a golden crust forms and the patties lift cleanly.
💡 Wet hands and a gentle touch. This mixture is deliberately soft, and adding flour to firm it up makes a different, heavier thing.
