Kuku Sibzamini (Persian Potato Patties)

Mashed potato and egg turned gold with turmeric and fried into soft patties, eaten hot or packed cold.

Ingredients

  • 700 g potatoes, cooked and mashed
  • 3 eggs
  • 1/2 tsp turmeric
  • 1 tsp salt
  • 3 tbsp neutral oil

Directions

  1. 1Mash the cooked potatoes until completely smooth, with no lumps left at all.
  2. 2Beat in the eggs, turmeric and salt until the mixture is even and deep yellow.
  3. 3Rest ten minutes; the mixture firms up and becomes far easier to shape.
  4. 4Wet your hands and form flat patties about a centimetre and a half thick.
  5. 5Heat the oil in a wide pan over medium heat.
  6. 6Fry four minutes a side until a golden crust forms and the patties lift cleanly.

💡 Wet hands and a gentle touch. This mixture is deliberately soft, and adding flour to firm it up makes a different, heavier thing.
