Kuli-Kuli (Nigerian Peanut Snack)

Roasted peanuts ground to a paste, wrung of their oil and fried into hard spiced rings that crack between the teeth.

Ingredients

  • 300 g roasted peanuts
  • 1 tsp ground ginger
  • 1 tsp cayenne pepper
  • 1/2 tsp salt
  • 250 ml neutral oil, for frying

Directions

  1. 1Blend the roasted peanuts for five minutes until they collapse into a thick, oily paste.
  2. 2Knead the paste in your hands over a bowl, squeezing out as much oil as you can. Keep squeezing past the point it seems finished.
  3. 3Work the ginger, cayenne and salt into the dry, crumbly paste that remains.
  4. 4Press into small rings or short sticks, packing them firmly so they hold.
  5. 5Fry at 160C for four minutes until deep brown and hard.
  6. 6Cool completely, about twenty minutes; they crisp as they cool, not in the pan.

💡 The oil you squeeze out is the whole technique. Paste left oily fries soft and greasy instead of snapping.
