Ingredients

  • 750g lamb, cut into chunks
  • 3 tablespoons vegetable oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons mustard seeds
  • 1 tablespoon fenugreek seeds
  • 2 teaspoons cumin seeds
  • 3 tablespoons yogurt
  • 2 tablespoons tomato paste
  • 1 cup water
  • 2 teaspoons salt
  • 1 teaspoon red chili powder

Directions

  1. 1Heat oil in a large pot and add mustard seeds, fenugreek seeds, and cumin seeds; let them crackle for 30 seconds.
  2. 2Add sliced onions and cook until golden brown, about 5 minutes.
  3. 3Stir in minced garlic and ginger, cook for 1-2 minutes until fragrant.
  4. 4Add lamb chunks and brown them on all sides, approximately 5-7 minutes.
  5. 5Mix in yogurt and tomato paste, stirring well to coat the lamb.
  6. 6Add water, salt, and red chili powder; bring to a boil.
  7. 7Reduce heat and simmer covered for 25-30 minutes until lamb is tender and sauce thickens.
  8. 8Adjust seasoning to taste and serve hot with rice or bread.
