Lamb Achari
Tender lamb cooked in a tangy, spiced pickling sauce with mustard seeds and fenugreek for an authentic Indian curry.

Ingredients
- •750g lamb, cut into chunks
- •3 tablespoons vegetable oil
- •1 large onion, sliced
- •4 cloves garlic, minced
- •1 tablespoon ginger, minced
- •2 tablespoons mustard seeds
- •1 tablespoon fenugreek seeds
- •2 teaspoons cumin seeds
- •3 tablespoons yogurt
- •2 tablespoons tomato paste
- •1 cup water
- •2 teaspoons salt
- •1 teaspoon red chili powder
Directions
- 1Heat oil in a large pot and add mustard seeds, fenugreek seeds, and cumin seeds; let them crackle for 30 seconds.
- 2Add sliced onions and cook until golden brown, about 5 minutes.
- 3Stir in minced garlic and ginger, cook for 1-2 minutes until fragrant.
- 4Add lamb chunks and brown them on all sides, approximately 5-7 minutes.
- 5Mix in yogurt and tomato paste, stirring well to coat the lamb.
- 6Add water, salt, and red chili powder; bring to a boil.
- 7Reduce heat and simmer covered for 25-30 minutes until lamb is tender and sauce thickens.
- 8Adjust seasoning to taste and serve hot with rice or bread.
