Lamb Chops with Herbs

Ingredients

  • 8 lamb chops (1.5 inches thick)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 lemon

Directions

  1. 1Pat lamb chops dry with paper towels and bring to room temperature for 15 minutes.
  2. 2In a small bowl, combine minced garlic, cilantro, parsley, cumin, paprika, salt, and pepper.
  3. 3Rub the herb mixture evenly over both sides of each lamb chop.
  4. 4Heat olive oil in a large skillet over medium-high heat until shimmering.
  5. 5Sear lamb chops for 3-4 minutes per side for medium-rare, or until desired doneness is reached.
  6. 6Transfer chops to a serving plate and let rest for 3 minutes.
  7. 7Squeeze fresh lemon juice over the chops and serve immediately.
