Lamb Chops with Herbs

Ingredients
- •8 lamb chops (1.5 inches thick)
- •4 cloves garlic, minced
- •2 tablespoons fresh cilantro, chopped
- •2 tablespoons fresh parsley, chopped
- •1 teaspoon ground cumin
- •1 teaspoon paprika
- •3 tablespoons olive oil
- •1 teaspoon salt
- •0.5 teaspoon black pepper
- •1 lemon
Directions
- 1Pat lamb chops dry with paper towels and bring to room temperature for 15 minutes.
- 2In a small bowl, combine minced garlic, cilantro, parsley, cumin, paprika, salt, and pepper.
- 3Rub the herb mixture evenly over both sides of each lamb chop.
- 4Heat olive oil in a large skillet over medium-high heat until shimmering.
- 5Sear lamb chops for 3-4 minutes per side for medium-rare, or until desired doneness is reached.
- 6Transfer chops to a serving plate and let rest for 3 minutes.
- 7Squeeze fresh lemon juice over the chops and serve immediately.
