Lamington Cake
Soft sponge cake cubes coated in rich chocolate and sprinkled with coconut for a delightfully indulgent Australian treat.

Ingredients
- •225g softened butter
- •225g caster sugar
- •4 eggs
- •225g self-raising flour
- •60ml milk
- •1 tsp vanilla extract
- •250g dark chocolate
- •60g butter
- •200g desiccated coconut
Directions
- 1Preheat oven to 180°C and grease a square 20cm cake tin. Cream together butter and sugar until light and fluffy, then beat in eggs one at a time with vanilla extract.
- 2Fold in flour alternately with milk until combined. Pour into tin and bake for 25-30 minutes until golden and a skewer comes out clean.
- 3Cool completely, then cut cake into 24 even squares.
- 4Melt chocolate with butter in a heatproof bowl over simmering water. Spread coconut onto a plate.
- 5Using two forks, dip each cake square into chocolate to coat, then roll in coconut. Place on baking paper to set for 30 minutes.
