Ingredients

  • 1 lb ground chicken
  • 3 tablespoons fish sauce
  • 3 tablespoons fresh lime juice
  • 2 tablespoons dried chili flakes
  • 3 tablespoons uncooked rice
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro
  • 4 green onions, chopped
  • 2 shallots, thinly sliced
  • 1 tablespoon sugar
  • for serving lettuce leaves

Directions

  1. 1Toast the uncooked rice in a dry skillet over medium heat for 3-4 minutes until golden and fragrant, then grind into powder using a mortar and pestle or spice grinder.
  2. 2Heat a skillet over medium-high heat and cook the ground chicken for 5-7 minutes, breaking it apart as it cooks until no pink remains.
  3. 3Mix fish sauce, lime juice, sugar, and chili flakes together in a small bowl to create the dressing.
  4. 4Remove the cooked chicken from heat and stir in the dressing while still hot.
  5. 5Add the rice powder, mint, cilantro, green onions, and shallots to the chicken mixture and toss gently to combine.
  6. 6Taste and adjust seasonings with additional fish sauce, lime juice, or chili flakes as needed.
  7. 7Serve the larb on a bed of lettuce leaves or alongside sticky rice.
