Ingredients
- •1 lb ground chicken
- •3 tablespoons fish sauce
- •3 tablespoons fresh lime juice
- •2 tablespoons dried chili flakes
- •3 tablespoons uncooked rice
- •1 cup fresh mint leaves
- •1 cup fresh cilantro
- •4 green onions, chopped
- •2 shallots, thinly sliced
- •1 tablespoon sugar
- •for serving lettuce leaves
Directions
- 1Toast the uncooked rice in a dry skillet over medium heat for 3-4 minutes until golden and fragrant, then grind into powder using a mortar and pestle or spice grinder.
- 2Heat a skillet over medium-high heat and cook the ground chicken for 5-7 minutes, breaking it apart as it cooks until no pink remains.
- 3Mix fish sauce, lime juice, sugar, and chili flakes together in a small bowl to create the dressing.
- 4Remove the cooked chicken from heat and stir in the dressing while still hot.
- 5Add the rice powder, mint, cilantro, green onions, and shallots to the chicken mixture and toss gently to combine.
- 6Taste and adjust seasonings with additional fish sauce, lime juice, or chili flakes as needed.
- 7Serve the larb on a bed of lettuce leaves or alongside sticky rice.
