A spicy and tangy Laotian duck salad with fresh herbs and a distinctive nutty flavor from toasted rice powder.

Ingredients

  • 1 lb ground duck or chicken
  • 3 tablespoons fish sauce
  • 3 tablespoons fresh lime juice
  • 2-3 Thai bird's eye chilis, minced
  • 3 tablespoons roasted rice powder
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro, chopped
  • 4 green onions, sliced
  • 1/4 cup shallots, thinly sliced
  • 2 tablespoons vegetable oil

Directions

  1. 1Heat oil in a large skillet over medium-high heat and cook the ground duck until browned and cooked through, about 5-7 minutes, breaking it apart as it cooks.
  2. 2Remove from heat and stir in fish sauce and lime juice until well combined.
  3. 3Add the minced chilis and roasted rice powder, stirring to distribute evenly.
  4. 4Fold in the mint, cilantro, green onions, and shallots until just combined.
  5. 5Taste and adjust seasonings with additional fish sauce, lime juice, or chilis as needed.
  6. 6Serve warm or at room temperature with sticky rice and fresh vegetables on the side.
