A zesty and herbaceous Thai seafood salad bursting with fresh lime, mint, and chilies that perfectly balances spicy, sour, and savory flavors.

Ingredients
- •1 lb mixed seafood (shrimp, squid, and mussels), chopped
- •3 tbsp fish sauce
- •3 tbsp fresh lime juice
- •2 tbsp roasted rice powder
- •1 cup fresh mint leaves, chopped
- •1/2 cup fresh cilantro, chopped
- •3 Thai red chilies, thinly sliced
- •2 green onions, sliced
- •1/2 red onion, thinly sliced
- •1 tbsp vegetable oil
Directions
- 1Heat oil in a large skillet over high heat, then briefly cook the seafood until just cooked through, about 3-5 minutes.
- 2Transfer the cooked seafood to a large bowl and let cool slightly.
- 3Add fish sauce, lime juice, and roasted rice powder to the seafood and toss well.
- 4Fold in the mint, cilantro, red chilies, green onions, and red onion.
- 5Taste and adjust seasoning with additional fish sauce or lime juice as needed.
- 6Serve immediately on a bed of lettuce or with sticky rice on the side.
