Lean Ground Beef Tacos with Lettuce Wraps

Ingredients

  • 1 lb lean ground beef (93/7)
  • 1 head butter lettuce or iceberg lettuce
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup diced tomatoes
  • as needed salsa, cilantro, and lime wedges for topping

Directions

  1. 1Heat olive oil in a large skillet over medium-high heat.
  2. 2Add diced onion and cook for 2 minutes until softened, then add garlic and cook for 30 seconds.
  3. 3Add ground beef to the skillet and cook, breaking it apart with a spoon, for 5-7 minutes until browned. Drain excess fat if needed.
  4. 4Stir in chili powder, cumin, salt, and pepper. Add diced tomatoes and simmer for 2 minutes.
  5. 5Carefully separate lettuce leaves and rinse them. Pat dry with paper towels.
  6. 6Spoon the seasoned ground beef mixture into each lettuce leaf and top with salsa, cilantro, and a squeeze of lime juice.
