Lean Ground Beef Tacos with Lettuce Wraps

Ingredients
- •1 lb lean ground beef (93/7)
- •1 head butter lettuce or iceberg lettuce
- •2 tbsp olive oil
- •1 medium onion, diced
- •2 cloves garlic, minced
- •2 tbsp chili powder
- •1 tsp cumin
- •1/2 tsp salt
- •1/4 tsp black pepper
- •1/4 cup diced tomatoes
- •as needed salsa, cilantro, and lime wedges for topping
Directions
- 1Heat olive oil in a large skillet over medium-high heat.
- 2Add diced onion and cook for 2 minutes until softened, then add garlic and cook for 30 seconds.
- 3Add ground beef to the skillet and cook, breaking it apart with a spoon, for 5-7 minutes until browned. Drain excess fat if needed.
- 4Stir in chili powder, cumin, salt, and pepper. Add diced tomatoes and simmer for 2 minutes.
- 5Carefully separate lettuce leaves and rinse them. Pat dry with paper towels.
- 6Spoon the seasoned ground beef mixture into each lettuce leaf and top with salsa, cilantro, and a squeeze of lime juice.
