- 2In a heatproof bowl, whisk together eggs, 1 cup sugar, 6 tablespoons butter, lemon zest, and lemon juice over simmering water, stirring constantly for 10-12 minutes until thick.
- 3Pour the lemon curd into the cooled tart shell and refrigerate for at least 1 hour until set.
