Lemon Drizzle Cake

Ingredients
- •175g softened butter
- •175g caster sugar
- •3 large eggs
- •175g self-raising flour
- •2 lemons, zested and juiced
- •2 tablespoons milk
- •1 teaspoon baking powder
- •100g icing sugar
- •Pinch salt
Directions
- 1Preheat oven to 180°C and grease a loaf tin. Cream butter and caster sugar together until light and fluffy.
- 2Beat in eggs one at a time, then fold in flour, baking powder, lemon zest, and salt. Stir in 1 tablespoon lemon juice and milk.
- 3Pour batter into tin and bake for 25-30 minutes until golden and a skewer comes out clean.
- 4While cooling, whisk icing sugar with remaining lemon juice to make the drizzle.
- 5Once cake is completely cool, pour lemon drizzle over the top, allowing it to run down the sides. Let set before serving.
