Ingredients

  • 175g softened butter
  • 175g caster sugar
  • 3 large eggs
  • 175g self-raising flour
  • 2 lemons, zested and juiced
  • 2 tablespoons milk
  • 1 teaspoon baking powder
  • 100g icing sugar
  • Pinch salt

Directions

  1. 1Preheat oven to 180°C and grease a loaf tin. Cream butter and caster sugar together until light and fluffy.
  2. 2Beat in eggs one at a time, then fold in flour, baking powder, lemon zest, and salt. Stir in 1 tablespoon lemon juice and milk.
  3. 3Pour batter into tin and bake for 25-30 minutes until golden and a skewer comes out clean.
  4. 4While cooling, whisk icing sugar with remaining lemon juice to make the drizzle.
  5. 5Once cake is completely cool, pour lemon drizzle over the top, allowing it to run down the sides. Let set before serving.
