Ingredients

  • 1 9-inch pre-baked pie crust
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1.5 cups water
  • 3 egg yolks
  • 1/2 cup fresh lemon juice
  • 2 tablespoons butter
  • 1 tablespoon lemon zest
  • 3 egg whites
  • 6 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Directions

  1. 1In a saucepan, combine sugar, cornstarch, and salt. Gradually stir in water and cook over medium heat until mixture boils and thickens, about 2 minutes, stirring constantly.
  2. 2In a small bowl, beat egg yolks. Slowly add hot mixture to egg yolks while whisking, then pour combined mixture back into saucepan.
  3. 3Cook for 1 minute over medium heat, then remove from heat. Stir in lemon juice, butter, and lemon zest until butter melts. Pour filling into pre-baked pie crust.
  4. 4In a clean bowl, beat egg whites until foamy, then gradually add sugar and vanilla extract, beating until stiff peaks form.
  5. 5Spread meringue over hot lemon filling, sealing edges to the crust to prevent shrinking.
  6. 6Bake at 350°F for 10-15 minutes until meringue is golden brown. Cool on wire rack for at least 1 hour before serving.
