Lemon Meringue Pie

- •1 9-inch pre-baked pie crust
- •1 cup sugar
- •3 tablespoons cornstarch
- •1/4 teaspoon salt
- •1.5 cups water
- •3 egg yolks
- •1/2 cup fresh lemon juice
- •2 tablespoons butter
- •1 tablespoon lemon zest
- •3 egg whites
- •6 tablespoons sugar
- •1/2 teaspoon vanilla extract
Directions
- 1In a saucepan, combine sugar, cornstarch, and salt. Gradually stir in water and cook over medium heat until mixture boils and thickens, about 2 minutes, stirring constantly.
- 2In a small bowl, beat egg yolks. Slowly add hot mixture to egg yolks while whisking, then pour combined mixture back into saucepan.
- 3Cook for 1 minute over medium heat, then remove from heat. Stir in lemon juice, butter, and lemon zest until butter melts. Pour filling into pre-baked pie crust.
- 4In a clean bowl, beat egg whites until foamy, then gradually add sugar and vanilla extract, beating until stiff peaks form.
- 5Spread meringue over hot lemon filling, sealing edges to the crust to prevent shrinking.
- 6Bake at 350°F for 10-15 minutes until meringue is golden brown. Cool on wire rack for at least 1 hour before serving.
