Ingredients

  • 2 lbs beef tongue
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 cup beef broth
  • 1 lb potatoes, cubed
  • 1/2 cup green olives, pitted
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. 1Boil the beef tongue in salted water for 45 minutes until partially tender, then remove and slice into thin pieces.
  2. 2Heat olive oil in a large pot and sauté onion and garlic until fragrant, about 3 minutes.
  3. 3Add tomato paste and cumin, stirring for 1 minute until combined.
  4. 4Pour in crushed tomatoes and beef broth, then add the sliced tongue and potatoes.
  5. 5Bring to a simmer, cover, and cook for 30 minutes until potatoes are tender.
  6. 6Stir in the olives, salt, and pepper, and simmer uncovered for 5 more minutes.
  7. 7Serve hot with rice or crusty bread.
