Ingredients
- •2 lbs beef tongue
- •3 tablespoons olive oil
- •1 large onion, diced
- •4 cloves garlic, minced
- •1 can (28 oz) crushed tomatoes
- •1 cup beef broth
- •1 lb potatoes, cubed
- •1/2 cup green olives, pitted
- •2 tablespoons tomato paste
- •1 teaspoon cumin
- •1 teaspoon salt
- •1/2 teaspoon black pepper
Directions
- 1Boil the beef tongue in salted water for 45 minutes until partially tender, then remove and slice into thin pieces.
- 2Heat olive oil in a large pot and sauté onion and garlic until fragrant, about 3 minutes.
- 3Add tomato paste and cumin, stirring for 1 minute until combined.
- 4Pour in crushed tomatoes and beef broth, then add the sliced tongue and potatoes.
- 5Bring to a simmer, cover, and cook for 30 minutes until potatoes are tender.
- 6Stir in the olives, salt, and pepper, and simmer uncovered for 5 more minutes.
- 7Serve hot with rice or crusty bread.
