Lentil and Chard Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup brown lentils, rinsed
  • 6 cups vegetable broth
  • 1 bunch Swiss chard, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons lemon juice
  • to taste Salt and pepper

Directions

  1. 1Heat olive oil in a large pot over medium heat and sauté diced onion until softened, about 5 minutes.
  2. 2Add minced garlic, cumin, and paprika, stirring constantly for 1 minute until fragrant.
  3. 3Add rinsed lentils and vegetable broth, bringing to a boil, then reduce heat and simmer for 20 minutes.
  4. 4Stir in chopped Swiss chard and continue simmering for 10 minutes until lentils are tender and chard is wilted.
  5. 5Add lemon juice and season with salt and pepper to taste.
  6. 6Ladle into bowls and serve hot with crusty bread.
