Lentil and Chard Soup

Ingredients
- •2 tablespoons olive oil
- •1 medium onion, diced
- •4 cloves garlic, minced
- •1 cup brown lentils, rinsed
- •6 cups vegetable broth
- •1 bunch Swiss chard, chopped
- •1 teaspoon ground cumin
- •1 teaspoon paprika
- •2 tablespoons lemon juice
- •to taste Salt and pepper
Directions
- 1Heat olive oil in a large pot over medium heat and sauté diced onion until softened, about 5 minutes.
- 2Add minced garlic, cumin, and paprika, stirring constantly for 1 minute until fragrant.
- 3Add rinsed lentils and vegetable broth, bringing to a boil, then reduce heat and simmer for 20 minutes.
- 4Stir in chopped Swiss chard and continue simmering for 10 minutes until lentils are tender and chard is wilted.
- 5Add lemon juice and season with salt and pepper to taste.
- 6Ladle into bowls and serve hot with crusty bread.
