Lentil and Walnut Meatballs

Ingredients

  • 1 cup cooked green lentils
  • 1 cup walnuts, finely chopped
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely diced onion
  • 3 cloves garlic, minced
  • 1 large egg
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Directions

  1. 1Preheat oven to 400°F (200°C).
  2. 2In a large bowl, combine cooked lentils, walnuts, breadcrumbs, Parmesan, onion, garlic, egg, oregano, salt, and pepper until well mixed.
  3. 3Form the mixture into 16-20 meatballs, about 1.5 inches in diameter.
  4. 4Heat olive oil in a large skillet over medium-high heat and brown the meatballs on all sides, about 5 minutes total.
  5. 5Transfer meatballs to a baking dish, pour marinara sauce over them, and stir gently to coat.
  6. 6Bake for 15-20 minutes until heated through and sauce is bubbling.
  7. 7Serve over pasta, rice, or with crusty bread.
