Lentil and Walnut Meatballs

Ingredients
- •1 cup cooked green lentils
- •1 cup walnuts, finely chopped
- •1/2 cup panko breadcrumbs
- •1/4 cup grated Parmesan cheese
- •1/4 cup finely diced onion
- •3 cloves garlic, minced
- •1 large egg
- •2 tablespoons olive oil
- •1 teaspoon dried oregano
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •2 cups marinara sauce
Directions
- 1Preheat oven to 400°F (200°C).
- 2In a large bowl, combine cooked lentils, walnuts, breadcrumbs, Parmesan, onion, garlic, egg, oregano, salt, and pepper until well mixed.
- 3Form the mixture into 16-20 meatballs, about 1.5 inches in diameter.
- 4Heat olive oil in a large skillet over medium-high heat and brown the meatballs on all sides, about 5 minutes total.
- 5Transfer meatballs to a baking dish, pour marinara sauce over them, and stir gently to coat.
- 6Bake for 15-20 minutes until heated through and sauce is bubbling.
- 7Serve over pasta, rice, or with crusty bread.
