Lentil Bolognese
A hearty, plant-based pasta sauce loaded with tender lentils, tomatoes, and aromatic vegetables that rivals traditional meat bolognese.

Ingredients
- •2 tablespoons olive oil
- •1 medium onion, diced
- •3 cloves garlic, minced
- •2 medium carrots, diced
- •2 stalks celery, diced
- •1 cup brown or green lentils
- •28 oz canned crushed tomatoes
- •1 cup vegetable broth
- •2 tablespoons tomato paste
- •1 teaspoon dried oregano
- •to taste salt and black pepper
- •1 pound pasta of choice
Directions
- 1Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery; cook for 5-7 minutes until softened.
- 2Stir in minced garlic and tomato paste, cooking for 1 minute until fragrant.
- 3Add lentils, crushed tomatoes, vegetable broth, and oregano. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
- 4Season with salt and pepper to taste.
- 5Meanwhile, cook pasta according to package directions in salted boiling water until al dente. Drain and set aside.
- 6Serve the lentil bolognese over cooked pasta, optionally topped with fresh basil or grated parmesan cheese.
