Lentil Bolognese

A hearty, plant-based pasta sauce loaded with tender lentils, tomatoes, and aromatic vegetables that rivals traditional meat bolognese.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 cup brown or green lentils
  • 28 oz canned crushed tomatoes
  • 1 cup vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • to taste salt and black pepper
  • 1 pound pasta of choice

Directions

  1. 1Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery; cook for 5-7 minutes until softened.
  2. 2Stir in minced garlic and tomato paste, cooking for 1 minute until fragrant.
  3. 3Add lentils, crushed tomatoes, vegetable broth, and oregano. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
  4. 4Season with salt and pepper to taste.
  5. 5Meanwhile, cook pasta according to package directions in salted boiling water until al dente. Drain and set aside.
  6. 6Serve the lentil bolognese over cooked pasta, optionally topped with fresh basil or grated parmesan cheese.
