Lentil Tacos

Ingredients

  • 1 cup dried brown lentils
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 8 corn or flour tortillas
  • as needed toppings (shredded cabbage, cilantro, salsa)

Directions

  1. 1Rinse lentils and add to a pot with vegetable broth. Bring to a boil, then reduce heat and simmer for 15-18 minutes until lentils are tender but not mushy.
  2. 2While lentils cook, heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.
  3. 3Add minced garlic, cumin, smoked paprika, and chili powder to the skillet. Stir constantly for 1 minute until fragrant.
  4. 4Drain cooked lentils and add them to the skillet with the spiced onion mixture.
  5. 5Stir in soy sauce and lime juice. Cook for 2-3 minutes, stirring occasionally, until the mixture is well combined and slightly thickened.
  6. 6Warm tortillas in a dry skillet or over an open flame for 30 seconds per side.
  7. 7Fill tortillas with lentil mixture and top with cabbage, cilantro, salsa, or your favorite taco toppings. Serve immediately.
