Ingredients
- •1 cup dried brown lentils
- •2 cups vegetable broth
- •2 tablespoons olive oil
- •1 medium onion, diced

- •2 teaspoons cumin
- •1 teaspoon chili powder
- •8 small corn or flour tortillas
- •2 ripe avocados, sliced
- •1/2 cup sour cream
- •1 lime, juiced
- •1/4 cup fresh cilantro, chopped
Directions
- 1Rinse lentils and cook in vegetable broth for 20 minutes until tender, then drain.
