Ingredients

  • 1 cup dried brown lentils
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 8 small corn or flour tortillas
  • 2 ripe avocados, sliced
  • 1/2 cup sour cream
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped

Directions

  1. 1Rinse lentils and cook in vegetable broth for 20 minutes until tender, then drain.
  2. 2Heat olive oil in a large skillet and sauté diced onion until softened, about 3 minutes.
  3. 3Add garlic, cumin, and chili powder to the skillet, stirring for 1 minute until fragrant.
  4. 4Add cooked lentils to the skillet and stir to combine, cooking for 2 minutes.
  5. 5Mix sour cream with lime juice in a small bowl to make lime crema.
  6. 6Warm tortillas in a dry skillet for 30 seconds per side.
  7. 7Assemble tacos by filling each tortilla with lentil mixture, avocado slices, cilantro, and a drizzle of lime crema.
